im going with 4 x 20tb just to split accross them so none get hammered at peak times but struggling to find where to get em

Look into distributed file systems. Do you think professionals hoard on 1 storage server? NO. They spread it out, they replicate it, Same concept as RAID but with server.

there is a lot of documentation on the internet, a little research does not hurt
