apart from apk easy tool or apk editor pro which if any are good to use on windows pc i have noticed both of aforementioned programs failing a few times to recompile
any recommendations appreciated

The best way to unpack, edit, sign and zip align apk files on a PC or MAC is with APK Tool, Java and Android Studio. Once you have those you just run a few commands on your CMD Prompt, edit your files with Notepad++ and run a few more commands and it's done. Having all of the tools to do it yourself keeps you from being dependent on other apps.
