Question PHP-FPM Config

Hello guys.

Under servers config we can notice that there is a config option regarding php-fpm, on how many instances to run on each server. Whats the best config to let adjusted? Use all cores or make it lower than maximum cores on CPU?

Use on demands but with some instances actived by default
