its slightly complicated pal as you have to find the exact file to change, for the the image above i suggested looking through colors.xml and trying to find an item with either list or categorie in the filename and one that has a similar color scheme to the one above, change and try will be trial. and error as all apps will name things like this differently

Values...colors...live text box. And you can customize your own color or choose from colors listed in the beginning and just use the code associated with that color
